Open vs. Closed Caps

Does anyone know of any difference in the contents of the open vs. closed caps?
The closed caps are more domed and the open are more flat or maybe even up facing. I found at least one store that specifically sells both open and closed (flat) caps that you can choose. The same question would apply to when to pick at the open vs. closed stage.
